強身健骨滴雞精 Super Chicken Soup

材料 Ingredients:

  • 全雞一隻(公土雞最好,較不油) One whole chicken (Organic or free range chicken are better)、紅棗數顆(寶寶吃的可不加)、枸杞數顆(寶寶吃的可不加,或者改加蒜頭)

一般鍋子做法 Method:

  • 將全雞去皮,去油質,從中切一半,用錘子敲斷骨頭 Cut the chicken in half, take off skin and fat, smash the bone with hammer
  • 全雞放入架高的內鍋,蓋上蓋子,再放入有裝水的外鍋,蓋上鋁箔紙包緊 Put these chicken on the rack in the inner pot and cover with lid tight, then put this inner pot into outer pot which fill with water, then cover with foil.
  • 大火煮滾後轉小火,煮三小時Bring to boil with high heat, then turn into low to keep steam at least for 3 hours.
  • 內鍋的液體即為滴雞精,可以去除浮油後,包成三小包裝冷凍儲存,方便飲用 The luquid in the inner pot are super chicken soup, skimmed the soup to remove fat, then packing into three small bags and store in freezer,  microwave it when need.

電鍋做法 Method:

  • 將全雞去皮,去油質,從中切一半,用錘子敲斷骨頭 
  • 全雞放入內鍋,蓋上蓋子,蓋上鋁箔紙包緊,再放入有裝三杯水的電鍋外鍋,按下開關 
  • 開關跳起來後,再重複裝三杯水倒入電鍋外鍋,按下開關
  • 重複上述步驟一次,開關跳起來後,再重複裝三杯水倒入電鍋外鍋,按下開關
  • 完成,內鍋的液體即為滴雞精,可以去除浮油後,包成三小包裝冷凍儲存,方便飲用 
附註 PS:
  • 也可以用壓力鍋取代喔 It's ok to use pressure cooker as well.

A

A Blanc – French for “in white”. Usually used to describe cream sauces, or meats that are prepared without browning them.

認識 Couscous 庫斯庫斯(北非粗麥粉)




記得K力第一次接觸到這個食材Couscous,是在三年前打工度假裡,遇到的義大利室友,所烹調的其一菜色。後來直到上學期,學校食譜中也有這道料理(搭配香菜、黑醋栗乾和檸檬汁,食譜請點:庫斯庫斯食譜),才進一步認識,但是當時心想,"涼涼的,怎麼沒什麼滋味"。剛好這學期有堂課要每個同學介紹老師指定的食材,而我就被分配到Couscous,才慢慢發現,這樣食材真的很好玩~
